Pepper Jelly Brussel Sprouts

Who loves Brussel sprouts raise your hand?! Anyone?? Well, you’re gonna love these!! The immense flavor is addictive. These little bundles of yumminess are tender, moist and packed with flavor. The pepper jelly is loaded with deliciousness. It kinda reminds me of wilted lettuce, which is another southern dish my mom used to make in the summer. It’s made with fresh green leaf lettuce, a warm bacon vinaigrette poured over the top and the lettuce wilts then takes on all the lusciousness of the vinaigrette.

Even of you never loved Brussel sprouts you will love these Pepper Jelly Brussel Sprouts. They are so quick and easy to make, you will find yourself making them often. The ingredients are simple and often just sitting in your pantry just waiting to be created into a delectable dish for any occasion.

They go with anything and warm up easily if you take them to a potluck or just eat them the next day if there are any leftovers. Brussel Sprouts are loaded with vitamins too so you can eat healthy and not even miss a beat. Healthy doesn’t have to equal yucky taste like so many other recipes. Yeah, the jelly has sugar in it but you use so little of it that it doesn’t even really count, right? So enjoy an amazing side dish and get all the benefits. It’s a win win!

Ingredients & Preparation

The Usual Suspects

  • 3 slices thick-cut bacon
  • 1 1/2 pounds Brussel sprouts, trimmed and halved
  • ¾ teaspoon kosher salt
  • ½ teaspoon fresh ground black pepper, divided
  • ¼ cup red pepper jelly
  • 1 tablespoon country Dijon mustard

The Plan

Preheat oven to 400⁰F

Place bacon in a 12-inch skillet; fry until crisp, about 20 minutes. Remove bacon and let drain on paper towels, reserving bacon drippings in skillet

Add Brussel sprouts, salt and ¼ teaspoon pepper to skillet, stirring until well combined

Bake, stirring halfway through, until Brussel sprouts are crisp-tender, 10 to 12 minutes

In a small bowl, stir together pepper jelly, mustard and ¼ teaspoon of pepper.

Add jelly mixture to Brussel sprouts, stirring until well combined

Bake until Brussel sprouts are tender, about 5 minutes.

Chop bacon and sprinkle over sprouts.

Garnish with green onions, if desired.

Serve immediately
