Gourmet Confetti Popcorn

Are you a popcorn fanatic? Is there anything more comforting than big bowl of buttered popcorn and having a movie night? This Gourmet Confetti Popcorn takes your popping to a whole new level! Since most of us keep popcorn, butter, marshmallows and probably a package or two of jello around, this recipe is practically ready in no time.

A whopping many moons ago when I was in college, one of my roomies would make this Gourmet Confetti Popcorn! It was so easy and quick to make and tasted oh! so yummy!! We would make so many different bright colors and fruity flavors, then mix them all up in a large bowl and serve when we had parties or just hanging out. It was always a huge hit.

Here we are, many years later and I am still making this fun, bright and colorful fruity snack with my family. Now my children are making it with their babies, my grandbabies!! Still a crowd favorite and with jello making so many flavors these days it’s even more fun and exciting. Gourmet Confetti Popcorn is great anytime of year and keeps well too!

Get creative with flavors, once you have the basic recipe there’s no limit to the flavors and creations you can make.

Ingredients & Preparation

The Usual Suspects:

  • 8 cups popped popcorn, 1/4 cup of un-popped corn makes 8 cups popped
  • 6 Tbsp. butter
  • 3 cups miniature marshmallows
  • 1/4 cup flavored gelatin

The Plan:

  • Preheat oven to 200º. Place popped popcorn in a large roasting pan. In a medium saucepan melt butter.
  • Add marshmallows and stir until melted. Add gelatin, stir until gelatin dissolves. Pour gelatin mixture over popcorn, stir until well coated. Bake 40 minutes, stirring every 10 minutes. Cool completely. Store in an airtight container.
  • Repeat with other flavors and mix them for a festive look and lots of flavors.
